I get why Dallas has the better odds. They've had the tougher route through the playoffs after taking out Vegas, the defending Champions, and then Colorado who won the Cup two years ago. The Avs were also co-favorites to win the Cup at +900 at the start of the NHL season.
Meanwhile, Edmonton went through LA and Vancouver, and neither of them were considered contenders per the odds at +2000 and +5000, respectively.
Oh, and Dallas doesn't have the same issue in the net that Edmonton does. Oettinger struggled mightily in Game 1 against Vegas but went on to hold a 0.926SV% and a 1.92GAA.

This series should go the distance. The historical trend disagrees. Of the last five Western Conference Finals, only two have gone to six games. But one of these two sides have been to the Western Conference Finals in the last three seasons.
But I'm with the books on this one. This Conference Final shouldn't be a quick series. The Oilers and Stars are so close to the Cup that they aren't about to take risks. I believe we're looking at a tight meticulously fought series.

Jake Oettinger: The Stars have a massive advantage in the goalie department with Jake Oettinger between the pipes. I've already shared his glowing numbers since Game 1 against Vegas. Over his still young career, Oettinger holds a 0.917SV% and 2.45GAA in the playoffs.
With the Otter in net, Dallas has a player that can steal a game or even a series.

Stars vs. Oilers Historical Playoff Betting Trends
Again, we haven't seen these two play in the playoffs since the 2003 playoffs. So while that's still technically betting history, we're talking about 21 years ago. No one who was playing in that series is still playing now.
More importantly, because of how long ago this series was we don't have betting data.

I'm not confident on which side will win this series. Which is why I believe it goes to seven games. I took Edmonton because I like their scoring depth.
We know about McDavid, Draisaitl and Bouchard. But we can't forget about Zach Hyman and his 11 goals. That's one goal shy of Dallas's two leading scorers combined.
The Oilers have five players with four or more goals while Dallas only has two (Johnston and Heiskanen). Shut them down and there goes the Stars offense.
